This is the greatest whisk I've owned for the following specific purposes:
Hollandaise sauce
Roux
Cheese sauce
Cream sauces
Caramelizing garlic
Scalding milk
The silicone balls on the bottom give you amazing access to all corners of the bottom of the pot. This is extremely useful when making thick or opaque sauces. The balls won't scratch the bottom of the pot, particularly if it's non-stick, and won't melt like plastic whisks. It is excellent for even whisking when you don't need a lot of air incorporated. The angle of the whisk also makes for very comfortable and effortless whisking.
I absolutely insist that you use no other whisk for making hollandaise.
The only criticism is that the handle isn't amazingly comfortable... but it's just a handle. Unless you're whisking for an hour straight, it won't be a bother.

This cool 11-inch ball whisk from WMF is like modern art for the kitchen, and amazingly functional. In this classic WMF patented design whisk, the stainless steel individual beaded wires make quick work of both mixing and washing. Eleven long wires surround one shorter one, and with the independent movement and extra weight provided by the black silicone beads at the tips, air is incorporated much more thoroughly into whisked food. There are no little crevices for thickened liquid to get caught in, making clean up a breeze.
